Innovative processing of the prized SL28 varietal creates a beautifully soft mouthfeel and layered complexity in this cup. Aromas of nougat, apricot, and key lime greet you, with notes of Moscato and more nougat when sipped. Soft white peach sweetness accompanies red grapefruit acidity, fading into a sandalwood-toned finish.

This lot is from two separate "gardens" of SL28 between 1,650 and 1,800 meters above sea level.

At the beginning of the rehydrated process, the cherries are treated as a natural process. The cherries are allowed to rest at the mill overnight after picking. Then they are rinsed, sorted, and placed on the patio to dry for 3 days. The drying cherries are then collected and soaked in mountain spring water for 24 hours before being depulped and moved to the greenhouse and dried on raised beds for 28 days.

Direct Trade:
Finca Santa Ana is a longtime Direct Trade partner of our sister company, Bird Rock Coffee Roasters. The farm has had multiple Cup of Excellence appearances, including #4 in 2010 and #16 in 2015. The carefully supervised quality control at the farm is evident in the cup.

Finca Santa Ana has set aside 5.4 hectares of its overall land as a forest reserve. From this area, rainwater is collected throughout the year as a reserve supply for harvest season. Finca Santa Ana composts the unused pulp from coffee cherries to be used as fertilizer on the trees in the coming year.

As part of our Direct Trade buying philosophy at PT's and Bird Rock, we always look for ways to invest in our farming partners in addition to paying a good price for the coffee. In 2015 Bird Rock shared an investment with Fernando to plant new seed stock at the farm with about 15 new varietals, including Mokka and Gesha. These shrubs are giving Finca Santa Ana more varietals to sell to specialty roasters and adding another dimension to this already great farm.

Blue Label coffees roast and ship on Tuesdays only. Order by 4PM CT on Monday to be included in Tuesday's roast.

Your entire order will ship on the Blue Label roast day unless you request otherwise in your order notes.
