"When Tanzania changed its export structure in 2018, the most motivated farmers in Shiston Village (outside Arusha, between Mt. Meru and Mt. Kilimanjaro) took advantage by organizing a community wet mill. In Tanzanian terms, this was a new AMCOS (Agriculture Marketing Cooperative Society) that for the first time could organize and sell through auction or direct export channels. Their success was immediate, with members joining from neighboring private groups until nearly all coffee producers in Shishton signed up.
"Cherries are hand-sorted by the delivering farmer before pulping, then fermented in water in plastic tanks for 72 hours before washing and drying on raised beds for 11-14 days."
