This smooth decaf opens with rich aromas of date, toffee, dark chocolate, and a hint of rosemary. Notes of date, cocoa powder, and cinnamon accompany root beer sweetness in the cup. The aftertaste features candied pecan and a touch of grapefruit.

"Peru is a shining example of progress and development through relationships. In 2014, we met Rony Lavan, a cupper at a cooperative in the Cajamarca region of Peru. After spending some time working alongside him, we started talking about sourcing smaller, higher quality, and more traceable offerings together. Since he founded Lima Coffees in 2017, we have been sourcing and developing the majority of our Peruvian coffees alongside his team, spending time in Jaen cupping and approving coffees while visiting farms and connecting with the many fantastic producers that Lima Coffees represents. 

"Rony is an ambitious and quality-driven cupper who has spent his career trying to carve out better and bolder coffees from small producers in Peru. The chemical-free Mountain Water Process involves soaking green coffee in fresh mountain water until it reaches a saturation level that allows the dissolvable solids, including caffeine, to be extracted. The water then passes through carbon filters, removing the caffeine before being returned to the tank. Using pressure, the coffee oils are reintroduced to the green coffee, leaving it around 98% caffeine-free.
