This smooth decaf opens with aromas of semi-sweet chocolate, prune, roasted almond, and caramel. Notes of dark chocolate and walnut mingle with toasted marshmallow sweetness and orange acidity in the cup. Dark chocolate, mulberry, and a hint of sage provide the finishing touch.

The Story

Bordering Guatemala and the pacific state of Oaxaca, Chiapas has been cultivating the majority of Mexican grown coffee for decades, with a majority of smallholders coming from indigenous populations. This particular lot hails from the region surrounding Volcan Tacana, the second-highest peak in Central America.

The Swiss Water Process

Swiss Water Process is a chemical-free method for removing caffeine from green coffee. The process involves soaking green coffee in fresh water until it reaches a saturation level that allows the dissolvable solids, including caffeine, to be removed. Caffeine-free green coffee extract (GCE) is then introduced to the beans, this causes the caffeine molecules to be extracted from the bean into the GCE. The now-decaffeinated coffee is then sent to be dried to the proper moisture content level for shipment.
