Velo de Novia is produced by smallholders farming an average of 1 to 5 hectares in San Jose de Lourdes in Cajamarca, Peru. Farmers cultivate Caturra and Bourbon varieties at approximately 1,800 meters above sea level and deliver their parchment to Cooperativa Agraria Norcafe Peru. This coffee is named after the Velo de Novia waterfall in Jaén whose magnificence embodies the courage and strength of the Amazonian people.

Farmers selectively handpick ripe, red cherry and process it on their farms. Cherry is pulped—most farmers working with Norcafe have an ecopulper, which uses less water—and fermented in water for 18 hours. Following fermentation, coffee is washed in clean water and laid on patios or "elvas" on the roofs of their homes. Parchment is raked frequently to ensure even drying. It takes approximately 18 days for parchment to dry.
