Moscato, Sandalwood, Red Grapefruit

Availability: In stock
- +

An innovative hybrid process creates a coffee with a beautifully soft mouthfeel and layered complexity. Aromas of nougat, apricot, and key lime greet you, with notes of Moscato and more nougat when sipped. Soft white peach sweetness accompanies red grapefruit acidity, fading into a sandalwood-toned finish.

Available whole bean in an 8oz or 4oz bag. This coffee roasts and ships on Tuesdays only. Please scroll down for more details.

The Story

This lot is from two separate "gardens" of SL28, spanning between 1,650 and 1,800 meters above sea level.

At the beginning of the rehydrated process, the cherries are treated as a natural process. After picking, the cherries are allowed to rest at the mill overnight. Then they are rinsed, sorted, and placed on the patio to dry for 3 days. The drying cherry is then collected and soaked in mountain spring water for 24 hours. The cherry is then depulped and moved to the greenhouse where it's allowed to dry on raised beds for 28 days.

Direct Trade

Finca Santa Ana is a longtime Direct Trade partner of our sister company, Bird Rock Coffee Roasters. The farm has had multiple Cup of Excellence appearances, including #4 in 2010 and #16 in 2015. The carefully supervised quality control at the farm is evident in the cup.

Finca Santa Ana has set aside 5.4 hectares of its overall land as a forest reserve. From this area, rainwater is collected throughout the year as a reserve supply for harvest season. Finca Santa Ana composts the unused pulp from coffee cherries to be used as fertilizer on the trees in the coming year.

As part of our Direct Trade buying philosophy at PT's and Bird Rock, we always look for ways to invest in our farming partners in addition to paying a good price for the coffee. In 2015 Bird Rock shared an investment with Fernando to plant new seed stock at the farm with about 15 new varietals, including Mokka and Gesha. In a few years, these shrubs will give Finca Santa Ana more varietals to sell to specialty roasters and add another dimension to this already great farm.
