Soft, juicy, and exquisitely peachy. Aromas of white peach, fig, and sweet sandalwood. We found notes of Asian pear, golden brown sugar, and peach, with a crisp lemongrass acidity and nectar-like sweetness. Look for a floral note of lychee along with sweet grilled peach in the finish.

The Story

It was in Jaramillo’s unique microclimate where Gesha was rediscovered in 2004. With cool temperatures and massive shade trees that have been standing for ages, the perfumed jasmine and stone fruit notes in the geshas from this area are unique, bright, and kaleidoscopic. To this day many of our top performing microlots come from little patches on the slopes of Jaramillo. The lower areas of the farm are planted with Catuai.

Processing Notes

During washed process, coffee harvested is taken to a receiving tank where water is pumped in order to push it down a funnel. Unripe “floaters” are discarded. After passing through the receiving tank, the remaining cherries have their skin and pulp mechanically separated by a machine.

The skin and pulp is collected to be used as fertilizer for the farms and pastures. The coffee is now comprised of the bean, surrounded by a layer of parchment (or pergamino), and covered in a sticky mucilage. Coffees then go to a mechanical demucilager to have their mucilage scrubbed off. The coffee sits wet in another set of holding tanks, ready to be put out to dry in the morning.
