First fact to know - a French Press or Press Pot is the easiest, and best, way to get truly exceptional, coffeehouse flavor from your coffee at home. And that one thing alone will improve your life in my opinion! :O) Okay, so maybe it's not that simple to improve your life, but if great coffee is just one step, than it's a small step for man-kind!
Life: is defined as animation or the course of existence of an individual. Studies* have shown that the use of coffee can greatly enhance animation and, at times, can even jump-start basic motor functions and brain activity.
Keys to getting great results with your Press Pot:
1st. Excellent quality coffee Beans
2nd. Fresh roasted coffee
3rd. Grind and dose your coffee correctly
4th. Grind your coffee right before brewing
5th. Make sure your equipment is clean
6th. Use pure (not distilled) water just off the boil

o IT'S IMPORTANT THAT COFFEE IS ROASTED. WITHIN TWO WEEKS OF BREW TIME. COFFEE BEGINS TO LOSE FLAVOR AFTER ABOUT 12 DAYS EVEN IF STORED PROPERLY. AT PTS COFFEE ROASTING CO. WE ROAST YOUR COFFEE TO ORDER AND SHIP DAILY. SO YOU HAVE ABOUT TWO WEEKS TO DRINK THIS POUND.

FACT: Roasting heats green coffee to a temperature sufficient to produce physical and chemical changes in the bean. It creates the flavor compounds of brewed coffee. Innate life lesson: taking the heat really does build character.
THIRD - USE CORRECT GRIND FOR BREWING METHOD
o FOR THE PRESS POT METHOD YOU WILL NEED A COARSE GRIND. THE GRIND SIZE IS DETERMINED BY THE BREW TIME TO BE USED. THE LONGER THE BREW TIME, THE LARGER THE GRIND WILL NEED TO BE. PRESS POT COFFEE SHOULD BREW IN 4-MINUTES.
o RATES OF ABSORBTION-The information you just read will be absorbed in direct proportion to your attention span. Instructions-Drink more coffee and read again… :o)

GRINDING THE COFFEE AT NIGHT BEFORE YOU GO TO BED WILL EXPOSE THE GROUND COFFEE TO AIR FOR A PROLONGED PERIOD AND CAUSE A FLAT TASTING CUP IN THE MORNING. WHEN DOSING THE COFFEE INTO THE PRESS POT, USE 2-LEVEL TABLESPOONS PER 6-OUNCES OF WATER. AFTER YOU’VE MADE A FEW POTS, ADJUST DOSE TO TASTE. BUT REMEMBER, UNDER DOSING YOUR COFFEE WILL CAUSE AN OVER-EXTRACTION AND A BITTER BREW. USING THE PROPER EXTRACTION SHOULD GIVE YOU A SWEET CUP OF COFFEE, FREE OF BITTERNESS.

o BEFORE BREWING, IT IS ESSENTIAL TO MAKE SURE YOU EQUIPMENT IS CLEAN AND FREE OF BOTH OLD GROUNDS AND STALE COFFEE OILS FROM PREVIOUS BREWS. FOR BEST RESULTS, ALWAYS CLEAN EQUIPMENT WITH WATER AND ELBOW GREASE IMMEDIATELY FOLLOWING THE BREW CYCLE. IT ONLY TAKES A FEW MINUTES, BUT IN THE LONG RUN YOU WILL TASTE THE DIFFERENCE. AVOID USING STORE BOUGHT DETERGENTS ON YOU PRESS POT. STORE BOUGHT SOAP WILL LEAVE A FILM AND FOUL THE FLAVOR OF YOUR COFFEE.

o COFFEE IS 98% WATER, USING TAP WATER WILL CAUSE YOUR GREAT COFFEE YOU JUST PURCHASED TO TAKE ON A TAINTED FLAVOR. TO GET THE BEST RESULTS OUT OF YOUR BEANS, USE FRESH, PURE (NOT DISTILLED) WATER. THEN BRING WATER TO A BOIL, REMOVE FROM HEAT AND WAIT ABOUT 45-60 SECONDS BEFORE AGGRESSIVELY POURING OVER THE GROUNDS. THE AGGRESSIVE POUR IS TO MAKE SURE GROUNDS ARE SATURATED EVENLY.

o TO GET THE BEST RESULTS, TIME AFTER TIME, TIME YOUR EXTRACTION. AFTER SATURATING THE GROUNDS WITH WATER, START A TIMER AND ALLOW COFFEE TO EXTRACT FOR 4-MINUTES. AFTER 4-MINUTES, STIR THE GROUNDS INTO THE COFFEE. REMOVE SPOON AND PLUNGE GROUNDS TO BOTTOM. ALLOW THE COFFEE TO SIT FOR ABOUT 30 SECONDS AND SETTLE, THEN POUR INTO A PRE-HEATED CUP OF YOUR CHOICE.
o So take time, stir things up and plunge in. Life, much like coffee, takes patience, attention, and some heart to get right‚

How to store...
Store your coffee in a cool, dry place in an airtight container. When possible, buy only one week's supply of beans at a time and grind just prior to brewing.
Grinding...
Buy whole beans and grind your coffee just prior to brewing to ensure freshness. Always use the proper grind for your coffee maker. Remember; the quicker the brew time, the finer the grind. The slower the brew time the more coarse your grind will need to be.
If you have one of those "press the top blade grinders," try these times and you should be heading the right direction:
4-6 seconds will get you a coarse grind for a French Press Coffee Maker.
5-7 seconds for a perc. brewer.
7-10 seconds for most of you will get you a grind that is in the ball park for a drip coffee brewer.
Good luck and if you can, upgrade to a "Burr Grinder."

Always start with filtered water (never softened water) since coffee is 98% water. Using tap water could impart a taint or distasteful flavor in your coffee. As a starting point, use two (2) level tablespoons per 6oz. of water. Tastes will vary, so adjust the amount to suit your preference. When you are finished brewing, don't forget to clean your brewer. It will last longer and produce a sweeter tasting coffee if kept clean. And last, but certainly not least, avoid leaving coffee on a burner for any length of time, or the coffee will take on a burnt, charred flavor.
